Beetroot moderate salad (Thermomix) (V)

This salad is suitable for the moderate version of the elimination diet but not for the low salicylate diet.

This recipe is a moderate sals version of the Thermomix (TM) classic (Everyday Cooking p 39). If you have a Thermomix, just roughly chop the beetroot and carrot, put everything in the Thermomix bowl and chop for about 2-3 seconds on speed 5, scrape down and another 3-5 seconds at speed 5. Otherwise, follow recipe below.

1 cup raw beetroot, grated (moderate in sals)
1/2 cup raw carrot, grated (moderate in sals)
1 tsp citric acid
1 stick chopped celery
1 shallot chopped fine
chopped chives
few sprigs chopped parsley (for colour not flavour)

Mix all well together. You can add extra low salicylate vegetables such as cold cooked chopped green beans, kidney beans, potatoes and swedes as a way of diluting the moderate salicylates if you prefer to reduce your salicylate intake.
